CHARDONNAY 2022.

Harvested manually at the beginning of February, this chardonnay without oak directly delivers the typical characteristics of the variety. Its natural acidity and aromatic profile are the expression of maritime influence.
It was aged on its lees for six months, which gives it great volume in the mouth. On the nose it reminds of stone fruits and white flowers, mixed with mineral notes and fresh grass. It has a refreshing journey in the mouth and a salty finish typical of its origin.

WINEMAKING.

The grapes were harvested in February, from boxes SUR 5 and SUR 8, located in the coldest sector of the vineyard located on the northeast slope of Cerro del Toro and two kilometers in a straight line from the Atlantic Ocean.
The soil has a silty loam texture with the presence of calcium carbonate and gravel. The plants are of clonal reproduction 548 on rootstock 3309. Once the fruit entered the cellar, the bunches were destemmed and, after leaving the press, the must was subjected to a static cold settling for 48 hours.
Alcoholic fermentation was activated in stainless steel tanks with selected yeasts at 16 °C. Once the fermentation was finished, the fine lees (lees) were kept, to start the aging work for 6 months; had no contact with oak.
In August, the wine was stabilized and filtered before bottling.
