The accumulated experience in cultivating French varieties encourages the development of clones, that is, individuals that share characteristics of the same variety, but with particular signs?

In this case, we make a 100% clone 777 Pinot Noir, one of the most suitable for red wines with high expression and aging capacity. The plants quickly adapted to the stony soil on the slopes of Cerro del Toro, in southeast-facing squares two kilometres from the Atlantic.

WINEMAKING.

The grapes were harvested on February 6, 2020, from the SUR 10 box (clone 777). In this sector of the slopes of Cerro del Toro, the soil has a silty loam texture, with the presence of calcium carbonate. The harvest was carried out at night.

 

Once the fruit entered the winery, the clusters were destemmed and the must underwent preferential cold maceration for 5 days. Alcoholic fermentation was activated in stainless steel tanks with selected yeasts, and at a controlled temperature of 24c. A post-fermentation maceration of 10 days was carried out. Half of the wine was sent to long-drying French oak barrels (36 months), and remained there for 12 months.

 

In the winter of 2020, the wine was blend in the barrel with the rest that remained in stainless steel, to be bottled prior to stabilization and soft filtering, so that natural sediments can be found in the bottle.
