This Tannat without aging in oak directly, expresses all the character of this variety.
 
Its ripe tannins give structure to an intense and colourful, full-bodied wine with fair acidity that makes it very juicy. It has aromas of ripe black fruits such as plum but also liquorice and violets. And on the palate, it is structured and fresh, with a long persistence.

WINEMAKING.

Grapes were harvested in March from NORTH  4, 5 and 1 plots, planted on the northeast slope of Cerro del Toro. The soil where this Tannat grows has a clay loam texture, with the presence of calcium carbonate and gravel.

 

The clones of the plants are 474 and 717. Once the fruit entered the winery, the bunches were destemmed and the must underwent preferential cold maceration for 24 hours. Alcoholic fermentation was activated in stainless steel tanks with selected yeasts and after 10 days the pomace was pressed.

 

During maceration (at 24°C), closed and open pump-overs were carried out to control the extraction of aromas and flavours. The wine underwent malolactic fermentation and had no contact with oak during aging.

It was bottled in December.
